Kawasaki makes good bikes, but Hondas and Yamahas are better. Hondas are the best, though. The Valkyrie is a lot of bike, and a lot of money. The Honda VTX is also quite a nice bike, 1795cc V-twin. Either/or, go with a Honda. They make the best engines (all the awards they get-against guys like BMW, Ferrari, Porcshe, Benz-say enough), and they put them in some really nice bikes.
